With the weather bouncing between warmth, snow, and rain, my sinuses have been feelin’ the pain (totally didn’t mean to rhyme, either). On such days, soup is the answer. I’m really not particular when it comes to soups, but broccoli seemed to be the perfect choice for today. I loosely followed Angela Liddon’s Broccoli & Cheeze Soup recipe. I halved the recipe, added cauliflower, and subtracted celery. I didn’t feel like chopping garlic, so that was nixed too. For the low-fat vegan “cheeze” sauce, I didn’t have Dijon mustard and simply added a few shakes of mustard powder. When I added the “cheeze” sauce, I didn’t like how thick the soup became, so I added some additional Better than Bouillon “Chicken” stock (approximately 3/4 cup).
I would definitely recommend Ms. Liddon’s website for some slightly more attractive photographs of this delicious soup.
