I’ve got 99 problems, but vegan buffalo chicken isn’t one.

That’s right. Vegan (and gluten free) buffalo chicken. It really is delicious. And for some reason unbeknownst to me, it’s only available in the Steel City. It should be national. World-wide really. (I have no affiliation with the brand- just a fan!) So, in celebration of this beautiful item, I’ve decided to share a recipe.

Vegan Buffalo Chicken Pizza

Dough: 

1 1/4 cup Trader Joe’s gluten free flour (or any)

1 1/2 tsp. baking powder

1/2 tsp. salt

1/2 tsp. dried oregano

1 tsp. dried basil

1/2 tbsp. oil

1/4 – 1 cup water (add small amounts at a time)

Directions: 

Preheat oven to 400 degrees.

Mix all ingredients until blended well. Either use a rolling pin or hands to press dough into a circle. Place on lined baking sheet. Pre-bake for 5 minutes.

Toppings: 

1/4 – 1/2 cup Vegan ABC Buffalo Chicken (you could also try Beyond Meat coated in hot sauce)

Mix of Mozzarella and Cheddar Daiya Cheeses

Sautéed Purple onion

Sliced Tomato

Pizza Sauce

Directions: 

Top crust with sauce, cheese, tomato, onion, and “meat.”

Return to oven for an additional 5-10 minutes (watching closely).

Serve with vegan ranch, if desired. Enjoy!
