Be Prepared.

I try to be. Sometimes. Sometimes those times are when I truly should be studying for finals and lab practicals. Mental health break, right? So, to prepare myself (and my hubs) for the week, I went to town cooking today (and yesterday).

For the next few days, we have:

(Frozen) Peanut Butter and Chocolate Chip Granola Bars

As a quick aside, I must note how annoying it was to extract these from my muffin tin. I sprayed the tin prior with EVOO, but it didn’t quite do the trick.

In addition, I also made way too many lentils (which will likely find themselves in a lentil loaf of some variety).

In terms of snacks, I have coconut milk yogurt, dried cranberries, flax tortilla chips, and ripe bananas (which will soon be sliced and frozen for smoothies).

Last week, I (kind of) prepared for the week and found it so much easier to exercise without getting hangry (hungry + angry) afterward. I’m a much happier person when fed. So hopefully, this week will be similar.

After finals and lab practicals, I’m looking forward to writing up some of my own recipes and sharing my canning tips with you! I absolutely love making apple butter and gifting it. It’s such a simple, but thoughtful gift to give. This year, I’m planning on branching out to tomato sauce and/or salsa. I’ll keep you posted. 😉
